We make a small selection of No-Added Sugar preserves, using stevia to take the edge of the sharpness. Stevia is a natural plant based sweetener which adds no calories to the preserves.
Some of the preserves are much softer than a normal jam, as sugar would normally be used to enable the fruit to set and form ajam consistency. Others have a slightly more jelly like consistency for those that we add a form of vegetarian gel to help them set slightly.
Traditioinally, sugar is used as a preservative in jams, therefore as these do not add sugar or any artificual preservative, they have a relatively short shelf life of 3-6 months from when they are made (depending on the flavour) and are best kept in the frdge. Therefore we make the no added sugar preserves in very small batches and we aim to only use fruit that is in season at the time, or that we have picked and frozen when they were at their best, so the range available varies throughout the year.
